Happy Monday Everyone!

I honestly really like Monday's. Although it does symbolize the start of the work week, it also symbolizes a fresh start. You can start your week off on the right foot or the wrong foot. You have the power to make healthy food choice, fit in regular exercise, and enjoy your week. It is a great time to renew your commitment to a healthy happy life. With that being said, how is everyone doing with their August Health Goals? I stuck to our group goal of eating fast food less than three times a week, and I some how made it the entire week with not one Diet Coke!!! How are your goals going?

When I woke up on Sunday morning, I was still channeling Betty Crocker (which isn't a bad thing), so after my morning workout, I made homemade blueberry muffins. I was so happy with how they turned out, I had to share the recipe with you.


Ingredients
1 cup Light Silk Soy Milk
1/3 cup unsweetened apple sauce
1/4 cup honey
1 egg
2 cups whole wheat flour (for less dense muffins, you could do half whole wheat and half regular flour)
3 tsp. baking powder
1/2 tsp salt
2 tbsp Splenda sugar blend
1 cup blueberries (frozen work best)

Topping Ingredients
2 tbsp. Splenda blend brown sugar
1/4 tsp. ground cinnamon

Directions
  1. Pre-heat oven to 400 degrees F. Spray 12 regular-size muffin cups with cooking spray, or place paper muffin cups in each slot.
  2. In a small bowl, stir together topping ingredients and set aside
  3. In a large bowl, whisk together soy milk, applesauce, honey, and egg until well blended. 
  4. Stir in flour, baking powder, splenda, and salt until all dry ingredients are moistened (batter will be fairly thick). 
  5. Fold in blueberries.
  6. Pour batter evenly into each muffin cup, then sprinkle with topping.
  7. Bake 18 to 20 minutes or until toothpick comes out clean.
  8. Remove from pan immediately and enjoy!

  1. I swam twice last week and I'm going to force myself again!! It wasn't as bad as I thought but it's more fun with you!

    Oh and I like E-V-E-R-Y-T-H-I-N-G for breakfast!!
