Paprika Rubbed Pork Tenderloin with Caramelized Apples and Onions

Happy Hump Day!

I hope you guys are having a great week so far. Things have been busy busy at work but pretty good. Summer is officially here and it is hot hot hot! Champ definitely doesn't mind the heat as long as he can come inside and lie down on the cold tile as soon as he decides he's had enough. This is his current favorite past time. He likes to pretend he has to go to the bathroom and then plop down on the grass and refuse to get up.



On Monday night, I did have time to try out a new recipe, and it was huge success! It was even E approved!


I found the original recipe at Eat Drink Paleo, but made several alternations to fit our taste buds (mainly to calm it down for E's sake). For the full ingredients list, head on over to her site!

Paprika Rubbed Pork Tenderloin with Caramelized Apples and Onions

To begin, I combined the smoke paprika, salt, pepper, and garlic to create a rub and coated the two chunks of pork. Try not to be jealous of my fancy blue plate. Hahahaha :)


I allowed the pork to rest while I started on the apples and onions. I sauteed the onions in coconut oil first until they were translucent. Then I added the green apple, all spice, salt, pepper, and a little orange juice to the onions.


While the onions and apples are browning (about 15 minutes), I seared the pork for two minutes on each side. This helps seal in all the juices!



Next, I preheated the oven to 355 degrees and cooked the tenderloin for about 15 minutes. After 15 minutes, I added the onion and apple mixture to the pan with the pork and cooked for an additional 5 minutes. Allow to rest for 5 minutes before serving. The end result was absolutely amazing!


I decided to leave out the horse radish sauce from her original recipe. The pork was so flavorful, you really didn't need it and E isn't a fan of horse radish. I also served ours with a side of green beans instead of spinach. Overall, I would give this recipe a 10 out of 10 and definitely plan on making it again!
