Howdy Friends!

Happy Hump Day! It is a dreary and scary day here in Austin. We got quite a storm last night with even a little bit of hail and crazy strong winds! I was teaching Pilates when the worst of it hit, and it felt like we were inside of a tornado the winds were so strong. It started shaking the ceiling tiles and some water even came through the roof. Not good! Luckily, my class was full of troopers so we kept pushing on! It still ended up being a great class!

After Pilates, I ran over and taught a cycle class, then it was finally time for dinner. I tried to accomplish one of my April Clean Eating goals and tried a new recipe. I don't know if it necessarily counts as a recipe because it was super easy, but it was still new to me. I had never cooked tofu at home before, and it was way easier than I thought it wold be. I followed this recipe by the amazing Angela at Oh She Glows!


After pressing the tofu for about 30 minutes, I simply seared it in a pan with coconut oil for about 5 minutes on each side with salt, pepper, and garlic. I topped it with a little gluten-free BBQ sauce and voila! Check out Angela's post for more detailed instructions. I also made another batch of Oatmeal Peanut Butter Banana cookies! It was dark and yucky outside (not good picture taking light) so I recycled this picture from the last batch, but you get the idea. :)


If your participating in the Clean Eating Challenge, how is it going? Sometimes, I find the hardest part of eating clean is figuring out creative things to eat. I often tend to stick with "safe" foods that I like and I know are clean. This can get boring really fast. I have found some great blogs, and websites full of clean eating recipes and advice that have been a life saver as I try to eat cleaner. Here are a few of my favorites.


First up, is one of my favorite gluten-free and vegan friendly blogs - Oh She Glows! Angela's recipes are always amazing and full of nutritious ingredients. I have used tons of her recipes, and I know you will love them too! Below is a picture of her Green Goddess Bowl. I made a version of it last week, and it was delicious.

CleanEatingMag.com is another website I visit on a regular basis for recipe inspiration. They have a variety of recipes for various lifestyles including gluten-free, vegetarian, and vegan. They help you with meal planning and are great when you are in a hurry because they have a huge list of 20 minute meals!

Next on my reading list is The Fitness Dish. Laury is a certified personal trainer, mom, and clean eating enthusiast. I love her because she has a realistic outlook on clean eating and creates amazing dishes for busy people. Bonus - her daughter Ella is precious! Although it is a little Fall sounding, I've been drooling over this soup!

Now, let's head on over to the Detoxinista. I think Megan likes peanut butter almost as much as I do, which makes her a winner in my book. She also creates amazing recipes that are usually super easy to follow. Be careful visiting her blog, because you are sure to leave hungry and ready to bake some of her delicious healthy treats! Her Almond Butter Freezer Fudge is on my list of my trys!

Another go to blog is The Real Food Runner! Katherine is not only a creative chef, but an all around amazing person! She has such a great heart and friendly writing style. Her vegan and raw recipes are amazing and sure to get your clean eating juices flowing. Prepare to drool over the following picture! According to the teasers on her blog, she is even about to come out with her own Ebook!

Lastly, Pinterest of course! We all know we spend too much time on Pinterest already, but at least it's going to a good cause now! I have a brand new board title "April Clean Eating Challenge" where I will be posting all the recipes I hope to try during the challenge!
