Happy Monday Friends!

How was your weekend? Mine was full of sports, sports, sports, and more sports. We managed to squeeze in basketball, track, and football all in one weekend.

On Friday night, we tried out a new restaurant near our house called Hyde Park Grill. It was absolutely delicious. I ordered their veggie burger with spiced sweet potatoes as my side. The sweet potatoes were definitely my favorite part! E of course ordered the chicken fried steak with french fries.


We will definitely be eating there again! We hurried home after dinner to watch some March Madness.

Saturday morning, I taught a spin class that rocked the house. It was packed and everyone had amazing energy! I recently mastered Spotify, and I am officially obsessed. Check out the playlist I used this Saturday.




I'm having so much fun discovering new music and making playlists, that I decided to add a whole Playlist Page on the blog for my favorite playlists. I will share the playlists I make for my classes on this page each week! Head on over and check it out!

After class, I rushed home to shower and get ready so we could head out to The Texas Relays. This is a huge track meet where the best high school, college, and professional track athletes compete at one huge meet. It was so neat to see some of the most competitive people in the sport race.

The stadium has an amazing view of the Austin skyline!

This is the start of the men's 4X100 meet relay. The Aggies won! Whoop!

After the relays ended, we grabbed some gluten-free pizza and then walked over to watch Texas' Spring Football Game. This is just a scrimmage, but it still got me extremely excited for football season! We lucked out and E got us the hook up to sit in the press box. You got to love AC in the Texas heat. We had the opportunity to sit in the visiting coaches box. It was pretty cool!





On Sunday, I woke up early to go get E Easter donuts and set up his Easter basket. I totally forgot to take pictures. Ugh! After that, we headed off to church to celebrate Easter!

After church, we rushed back home for what else........Basketball. We spent the rest of the afternoon cuddling on the couch watching basketball. Both of my teams won, which helped out my bracket for sure. My thoughts and prayers are with Kevin Ware, the injured Louisville player. If you did not see the game, he suffered a very very nasty broken leg during the first half. I was so glad the team was able to rally after such a traumatic event and win the game for him!

Spring is officially here. The weather is warmer, the flowers are blooming, and shorts and tak tops are on their way. With that thought looming in the back of my head, I was excited when I read on my friend Amy's blog this morning about her April Clean Eating Challenge. What better way to usher in Spring, then with 30 days of clean eating? Head on over to Amy's blog and check out her goals for clean eating this month!

My April Clean Eating Goals:
  • Cut out as many pre-packaged processed foods as possible.
  • Increase my intake of fresh fruits and vegetables.
  • Continue to have at least one green smoothie a day.
  • Cook more creative meatless meals!
  • Try new fruits and vegetables.
  • Cut out added sugar (including candy and gluten-free baked goods).

Here is my clean dinner from Sunday night. Grilled portobello mushrooms topped with avocados, and new potatoes with green beans on the side.



Today's clean eating lunch included Butternut Squash Quinoa Salad with a side of fresh strawberries. I am still loving this recipe for lunch!


Alrighty guys, I'm off to walk the pup before my cycle class this evening.

  1. I'm so glad that you're joining me :) I must that you and E are so similar to JP and I when it comes to food. I'm always getting something healthy ordering without a bun or something crazy and JP will always have something I wouldn't touch with a side of french fries! Boys...
