4th of July Eats

Howdy!

How are you today? I hope you all had a wonderful Holiday weekend! Hopefully, you are returning to work rested and ready to take on your week!

I have two delicious recipes to share with you today. I don't know about you, but I LOVE guacamole! After watermelon, it is probably one of my favorite foods. Although avocados are healthy fat, eating an entire bowl of full fat guacamole (especially if you use globs of sour cream) is not good for anyone's waistline. This recipe allows you to have your guacamole and eat it too! :)

Waistline Friendly Guac!


Ingredients:
1 15oz can young green peas
2 small avocados
4 oz plain Greek Yogurt
1/2 tsp garlic (or more to taste)
1/4 tsp salt
1/8 tsp pepper
1/8 tsp paprika
1/4 cup of your favorite salsa

Directions:



1. Mash up peas and avocado
2. Add in all of the other ingredients and stir until well mixed
3. Enjoy with your favorite baked chips, crackers, or on your portobello burger

Grilled Portobello Burger:


Ingredients:
2 Portobello mushroom caps
1/4 cup balsamic vinegar
1 tsp basil
1/2 tsp oregano
1 tsp garlic powder
salt and pepper to taste

Directions:
1. Mix all ingredients, minus the mushroom tops, together in a small bowl.
2. Place caps in a shallow container and pour mixture on top.
3. Allow to sit for 15-30 minutes in the refrigerator.
4. Place caps on grill (I used the George Foreman) for 7-10 minutes.
5. Remove from the grill and serve with your favorite fixings.

I slathered some waistline friendly guac on top of 1 slice of sprouted grain bread. It made for one delicious 4th of July burger.
