Blueberry Banana Mamma Chia Smoothie

Howdy,

Happy Hump Day everyone! I hope you guys are having a great day so far. I have a yummy smoothie recipe lined up for this weeks installment of What I Ate Wednesday.

After reading yesterday's post, you know I have not been eating watermelon. :( I was also pretty over PB&J, so I mixed things up a bit for lunch this week with an open faced turkey, colby jack, and avocado sandwich on gluten free bread.



I'm not usually a huge sandwich person, but I am totally going through a phase right now. This sandwich absolutely hit it out of the ballpark in my book. It's even better if you toast your bread first and add a little spicy mustard!

Since my tummy still isn't loving real food in the morning, I went with a smoothie for breakfast. I decided to pump up the nutrition factor by throwing in a Mamma Chia Squeeze Vitality packet. Total success. Trusty smoothie ingredients + a Mamma Chia packet = a power packed smoothie!





Blueberry Banana Mamma Chia Smoothie

Ingredients (1 large smoothie)
  • 1 large handful of spinach
  • 1 Wild Raspberry Mamma Chia Squeeze packet
  • 1/2 a frozen banana
  • 1/2 cup frozen blueberries
  • 1 scoop vanilla protein powder of choice
  • 1 packet of stevia (optional)
  • 1/2 cup of water
  • 1 handful of ice
Instructions
Place all ingredients into a high speed blender.
Blend until smooth.

Quinoa, Corn, Pea & Avo Salad

Happy Wednesday!
How is your week going so far? Mine has been pretty crazy. I taught 5 classes yesterday, so by the time I got home my brain was no longer connected to the rest of my body! :) In other words, I couldn't speak in coherent sentences because I was so tired of talking. Luckily, my husband still loves me!

It's What I Ate Wednesday, and I have a delicious recipe to share with you!





I've been really concentrating on upping my greens lately, so I started off Monday and Tuesday with a Glowing Green Smoothie (recipe to come once I have perfected my favorite version)!


I have also been trying to cut back on the coffee, so I traded my second cup for a glass of delicious chia tea! Chia tea has significantly less caffeine than coffee, but it still does the trick for me in the morning. I think I just love drinking something warm to start off my day.

Now, on to the most delicious item of the week. Allow me to introduce you to Mr. Quinoa, Corn, Pean and Avo Salad! Man is it delicious! I found the recipe in Kimberly Snyder's Beauty Detox Solution book, and tweaked it just a bit to suite my taste buds.

Quinoa, Corn, Pea, & Avo Salad

Prep Time: 15 minutes
Cook Time: 15 minutes

Ingredients (6 servings)
    Salad Ingredients
    • 2 cups water
    • 1 cups black quinoa (you can use whichever variety you prefer)
    • 1 can of organic white corn (rinsed and drained)
    • 1 large avocado sliced
    • 3 Tbs. finely chopped red onion
    • 1 cup frozen green peas

    Dressing Ingredients
    • Juice of one small lemon
    • 1 Tbs. olive oil
    • 1 Tbs. Gluten-Free soy sauce
    • 1 Tbs. brown rice vinegar
    • 1/2 Tbs. minced garlic
    Instructions
    In a medium saucepan, bring the water to a boil. Reduce to low heat, and add the quinoa. Simmer until the water is absorbed (approximately 10-15 minutes). Set quinoa aside to cool.
    Chop red onion and avocado. Mix with corn and peas in a large bowl.
    Whisk all dressing ingredients together in a small mixing bowl.
    Combine vegetables, quinoa, and dressing ingredients together and place in fridge.

    Chewy, Fruity & Chocolatey

    Hello there friends,
    How are you today? Fabulous I hope! E and I are going out of town next week, so this week is crazy getting everything ready. Taking off work makes me a bit anxious, but I am trying my best to just get everything set as best I can, and then let it go! We will see how it goes. Haha :)

    On to more exciting things! It's What I Ate Wednesday Time and I have some yummy eats and new products to share with you!


    First up is a brand new to me protein powder. BiPro is a sugar free, fat free, carb free, 100% natural whey protein. Check out the nutrition facts!



    This protein powder didn't really have much of a taste which meant it was perfect to mix into my morning green smoothie. I combined strawberries, bananas, spinach, ice, BiPro, and 1/2 cup water together in my cute pink blender. It was absolutely delicious and not the least bit chalky. I honestly couldn't even tell there was protein powder in the smoothie.


    The perfect way to start the day! For lunch I packed in even more veggies with a salad monster topped with green peas, cooked quinoa, carrots, mushrooms, and nutritional yeast. Yummmm!!


    The good eats just continued on yesterday with a yummy new gluten free chewy granola bar. Perfectly Simple granola bars are gluten free and have 10g of protein. I tried the cranberry almond flavor, and absolutely loved it!! I have also tried the peanut butter crunch flavor, but the cranberry almond is definitely my favorite.


    So we've seen chewy and fruity so where is the chocolate you ask! Here she is. Isn't she beautiful?



    OK so she might not be a looker, but this PB2 2 minute microwave cake was delicious. I had to throw in a few chocolate chips for good measure of course. This cake is full of protein thanks to the PB2 and egg whites, low in calories and sugar (especially if you leave out the chocolate chips), and super quick to make. I am still perfecting the recipe, but I will be sure to share it with you as soon as it's perfect!

    Love Your Veggies and Your Chocolate

    How are you this wonderful hump day? I am absolutely loving the warmer weather and longer days we are having here in Big D. Something about it being light at 6am all the way until 8:30pm just makes me all warm and fuzzy inside. It's like you are actually gaining hours in the day to be productive.

    Yesterday, was our 2 year wedding anniversary so E and I went out to dinner and to get frozen yogurt of course. We are taking a trip to Florida the second week of June, so we are going to have round two of celebrations then! :) It was a wonderful night, and I am so lucky to be married to such an amazing man!

    To start your Wednesday off right, take a moment of bask in this cuteness. It is literally one of the sweetest things I have ever seen!

    I am loving putting flax seeds on my salad lately. They add a great texture and slightly nutty flavor! When mixed with avocado and feta cheese, it makes the perfect lunch! :)

    I am always on a mission to find ways to fit in more vegetables, but to be honest with you, sometimes I am stumped when it comes to cooking certain veggies. So when I came across this helpful little cheat sheet from KidSpot.com, I was beyond thrilled.

    What I Ate Wednesday Gets Blended!

    Happy What I Ate Wednesday!

    How are you today? It's Wednesday, and that means bring on the What I Ate Wednesday!





    My eats were definitely very green and full of veggies yesterday! I started out the day with a Strawberry Banana Green Smoothie. This wasn't your average green smoothie. It was full of ingredients that can help balance your blood sugar such as chia seeds, cinnamon, spinach wich is full of fiber, and protein powder. The fruit and veggies also packed in the vitamins and minerals.
    Bold and Balanced Strawberry Banana Smoothie

    Ingredients (serves 1)
    • 1 LARGE handful of spinach
    • 1/2 a banana
    • 1 cup strawberries
    • 1 tbsp chia seeds soaked for 10 minutes in 1/2 cup water
    • 1 scoop protein powder
    • 1/2 tsp cinnamon
    • 1/2 cup almond coconut milk or milk of choice
    Instructions
    Blend and enjoy!

    Soaking the chia seeds in water before you put them in your smoothie allows them to soak up some of the water and bulk up which helps you feel fuller longer! Always a good thing.

    Lunch was my normal salad, piece of fruit and yogurt. I'm so original. Not!




    As the temperature steadily climbs, so does my cravings for smoothies. They are just the perfect meal or snack, and you can never get in enough fruits and veggies right? My afternoon Peach Berry Smoothie was the perfect snack to get me through my long afternoon full of teaching. Hello two kickboxing classes, 1 cycle, and a Pilates reformer class. Sweat is beautiful!

    Peach Berry Smoothie

    • 1/2 cup peaches
    • 1/2 cup Strawberries
    • 1/3 cup blueberries

    With this in my tummy, I powered through my last kickboxing class and Pilates class no problem. However, I was pretty hungry come7:30pm when it was time to eat dinner. Chicken fajitas in corn tortillas with avocado and a side of rice and black beans was on the menu for last night. Easy but delicious, and the hubby is a fan too!



    I try to include as many different colors, via fruits and veggies, in my diet every day to try and fit in as much nutrition as possible. We all know we should do this, but sometimes it's nice to see exactly what each food helps our bodies do. Check out this great chart on the benefits of specific foods.     Easy Peasy Fiesta Chicken

    Happy Hump Day!

    It's Wednesday, and I definitely feel like the lack of sleep from my trip to Cali is catching up with me! :) It was still totally worth it though. I am definitely on board with the What I Ate Wednesday April Challenge by Peas and Crayons and I am trying hard to pack in the veggies!



    Breakfast was a peach blueberry green smoothie.



    Lunch was a big salad with basil goat cheese, carrots, hummus, and quinoa. As you can see I was pretty hungry come lunch time and forgot to take a picture until about halfway through. Whoops!


    Dinner was definitely the best meal of the day. I made crock pot fiesta chicken. This meal is so easy, but absolutely amazing! E and I both love it, and it's healthy to boot.


    All you need is chicken breasts, 1 can of yellow corn, 1 can of black beans, and 2/3 cup salsa of choice. Place the chicken in the crock pot and top with whole can or corn (I don't drain the corn), 2/3 cup of salsa, and 1 can of black beans (I drain and rinse the beans to cut down on sodium). Cooke on low for 6-8 hours or on high for 4-5 hours. Make sure you note that the time varies based on how big your crock pot is!


    I whipped up some rice to go along with the chicken and veggies. Another bonus of this meal is the leftovers make a great Mexican salad the next day! :)
    Lisa, over at Thrive Style posted this video on her Facebook page earlier today and it was too good not to share with you. Fox News interviews author Kimberly Snyder of the Beauty Detox Solution, on the 7 "Healthy" food that have more sugar than Twinkies!!! It's a must watch.



    Are there any of those foods you need to rethink about. I know I'm going to go check my tomato sauce right now!
