Peanut Almond Chia Protein Bites

Howdy!

I hope your Tuesday is off to a fabulous start! Mine is going great so far. I kicked the day off with at 7 AM Pilates Mat class and 9 AM Barre class fueled by Peanut Almond Chia Protein Bites. Both classes were great and the Peanut Almond Chia Protein Bites have to be my new favorite version of my original chia power balls. Thanks to my garage workout and Barre class yesterday, the following picture is very appropriate.


I woke up with a very sore booty and my triceps are giving me some love as well! After my two classes this morning, my legs are definitely toast and ready for a little R&R this afternoon. After my classes, I was starving so I popped two more of these bad boys in my mouth before hopping in the shower.



They are full of protein from the PB2 powder, almond butter, and coconut flour, healthy fats (omega 3's) from the chia seeds and flax seeds, and complex carbohydrates from the dates, seeds, and coconut flour. These protein bits are perfect to grab for a quick snack before or after a workout! Plus, they are super simple to make! Belle helped me whip them up yesterday in about 10 minutes.

Peanut Almond Chia Protein Bites

Prep Time: 10 minutes
Keywords: blender snack gluten-free soy-free chia seeds
Ingredients (1 Dozen)
  • 7 pitted majool dates
  • 1/4 cup chia seeds
  • 1/4 cup flaxseeds
  • 1/4 cup coconut flour
  • 1/3 cup PB2
  • 1/3 cup water
  • 1/4 tsp salt
  • 3 tbsp. almond butter (could sub any nutter butter
Instructions
In a small bowl, mix 1/3 cup PB2 with 1/3 cup of water and 1/4 tsp salt. Stir until it turns into a thin looking peanut butter.
Place pitted dates in food processor and pulse until finely chopped.
Add remaining ingredients and pulse until well mixed. It should form a VERY thick dough like consistency.
Roll into 1 inch balls and enjoy! (I store mine in the refrigerator to make sure they hold their shape and stay fresh.)

Friday Favorites - Five Things I Loved This Week

Happy Friday!

I hope you are all having a great Friday! This week seems to have really gotten away from me. Between work, Belle, and some other exciting projects, I feel like it got super crazy very fast. I have about 20 minutes before the tiny human wakes up from her nap so let's get down to business. Here are a few of my favorite things from this week! Favorite Motivational Quote:

Sometimes when my alarm goes off at 4:30 AM, I have to quickly remind myself that I can either roll over and groan about it, or get up and realize that it's going to be a great day! I truly believe your attitude has more power over your life than almost anything else.


Favorite Recipe:

I shared this Sugar Free Avocado Chocolate Pudding recipe with you guys a couple of weeks ago, but it is still by far my new favorite treat! I have made it multiple times since I first shared it on the blog. If you haven't tried it yet, and you love chocolate, what are you waiting for?


Favorite Belle Outfit:

My favorite Belle outfit of the week definitely had to be the pink camo onesie she got from Grandpa George for Christmas. Girl can definitely rock the camo don't you think?



Favorite Workout:

My favorite workouts this week have definitely come in my Barre class. Something about this playlist is extra booty burning. I leave every class dripping in sweat and I am definitely sore. The awesome clients that join me for class are really what make it so much fun!




Favorite Article:

My very talented friend, Alison at Fearlessly Fierce, wrote a great article this week about why fitness should be something that you strive to incorporate into your life each and every day versus just bikini season. She is one smart cookie, so I definitely recommend you pop over and check her out.

Weekly Meal Planning | Gorgeous Weather | Sick Babies

Happy Monday!

I hope you all had a fantastic weekend and are recharged and ready to take on another Marvelous Monday. Ours was full of friends, basketball, lots of walking, and poor sick baby girl cuddles. To start the week off right, I am linking up with Katie for Marvelous In My Monday!


On Friday, my friend Kelley and her husband, Eric, arrived from Houston for the weekend to visit Annabelle and I as well as her sister Jamie and her little boy Max (I guess they came to see our hubbies as well). :) After my packed 11 AM Barre class on Friday (Thank you to all of my AMAZING students who came to class! You guys rocked it!), I headed over to Jamie's house to meet up with Kelley. Jamie, Kelley, and I took Max and Annabelle on a walk and went for a quick visit to the children's museum. It was Belle's nap time so she slept through most of the museum, but it was fun getting to catch up with Kelley and Jamie.

Saturday morning, Annabelle woke up with a little bit of a runny nose so E stayed home with her while I went and met Kelley and her Eric at Town Lake to go for a hike. We first grabbed coffee and Whole Foods and then set off around the lake.


It was an absolutely gorgeous day. It was so warm, I was in running capris and a tank top the whole time! The trail was pretty packed, but we still had fun visiting and soaking up a little sun as we walked.


The view of downtown from across the river is always so pretty. I had some fun with a photo app on my phone here.



After the walk, I headed home for a quick shower so E, Belle, and I could head to the UT basketball game versus West Virginia. We actually ran into some of our friends there and UT won, so it was a doubly fun game! After the game we headed home so we could get Belle to sleep semi close to her usual bed time. Unfortunately, Belle took a turn for the worse over night. What started out as a little runny nose turned into a full blown cold that kept her up sniffling most of the night. Since she didn't get much sleep and woke up super early, we spent most of Sunday snuggling on the couch. Even though she was feeling pretty under the weather, she was still such a sweet smiley girl! 



Meal Plan For The Week:

I am definitely what you call a planner and that goes for meals as well. I don't necessarily cook all of my food for the week on Sunday, but I do write out all of my meals, grocery shop, and do a little bit of food prep before the week gets going. This allows me to go into the week with a plan and enough healthy food on hand to know I am equipped to stay on track for the week. Not only am I a planner, but I am a total creature of habit. I find something I like and I stick to it (some call that loyal right)! This means that most of the time I have the same one or two things for breakfast or lunch every week.

When it comes to breakfast, I eat at home on M/W/F (breakfast option #1), and at the studio T/TH (breakfast option #2). I have fallen in love with this recipe for avocado tuna salad and am going to milk it for as long as I can then I'll move on to my next lunch favorite (I had turkey and avocado roll-ups every day for a year so it'll probably stick around for awhile). :)

Now, I do try to get creative when it comes to dinner. This can be hard since the hubby would prefer to have pasta, tacos, chicken nuggets, burgers, and pizza in that order EVERY SINGLE WEEK. I do have to give him some credit; he has really been trying to branch out lately. We have been testing at least one or two new recipes every week for the past few weeks, and it seems to be going pretty well. I thought it would be fun to share my meal game plan with you guys this week. I will report back next week with how my new creations turned out.

Breakfast Option #1 - 3 scrambled eggs with 2 small links of turkey sausage and 1/2 cup strawberries
Breakfast Option #2 - 2 boiled eggs and Cinnamon Chia Pudding

Lunch - Avocado Tuna Salad with a green apple and 1 tbsp almond butter

Dinners:
Sunday - Bunless burger (compliments of the hub) topped with sliced avocado and served with a sweet potato and side salad

Monday - Teriyaki chicken and veggie stir fry

Tuesday - Easy Peasy Paleo Meatballs and zuchinni noodles with a side salad

Wednesday - Sweet Apple Pan Chicken (This is my first time to try this recipe. I will let you guys know how it goes) + baked beans for E and a sweet potato for me

Thursday - Crockpot BBQ pulled pork and fresh green beans + a side salad

Friday - Dinner Out

Saturday - Dinner Out

Snacks: boiled eggs, Cookies N Cream Quest bars, 100 calorie pack of almonds, apple or banana with almond butter, chia energy balls (testing out a new recipe here to).

Sugar Free Avocado Chocolate Pudding

Happy Monday!

I hope you all had a nice, relaxing, and fun weekend. Ours was extremely low key. Baby girl got her 6 month shots on Friday plus a flu shot, so she wasn't feeling very well over the weekend. We mainly hung out at home and had extra snuggle time.

On Saturday, I woke up early and got in a great HIIT workout before Belle started to stir. E's parents came in town to bring the pup back to us (they watched him for us since we couldn't fit him in the car after Christmas), so we spent most of Saturday just hanging out at home spending time with them. It is always great to have them over! Since we got the thumbs up from the pediatrician on Friday, baby girl got to test out solid food for the first time on Saturday. We started with sweet potatoes, and I don't think she completely hated them. The faces sure were funny!




Sunday started with a killer tabata workout (I will post for workout Wednesday), and then it was grocery store time for little bit and I. It is so weird to me that she can sit up like a big girl in the cart. I think she was still feeling a little under the weather from her shots because she wasn't her normal smiley self. We spent the rest of Sunday watching the Cowboys game (sad day), snuggling and prepping for the week. It was definitely a low key weekend, but those are nice from time to time!




Next up, I have a DELICIOUS new recipe for you guys. What better way to start out the week than with chocolate? I can't really think of one. Can you? As I mentioned last week, I am really trying to cut back on my sugar intake so this recipe is sugar free but you won't even know it (really, I promise)!




I have seen avocado pudding recipes on many of my favorite blogs, but had never given it a try. I love avocados and I LOVE chocolate, but the two mixed? I was skeptical to say the least! Last week the stars aligned and I had avocados and cocoa powder in my house at the same time, so I had no excuses not to try it. I checked out a few different recipes and then ended up coming up with a creation of my own to keep the sugar count low.


Hallelujah! I am a total believer now! It's rich, chocolaty, and oh so satisfying. I literally had to force myself not to eat the entire bowl in one sitting (the recipe makes four servings). It's the perfect treat to crush a sweat tooth without derailing your healthy eating goals. I dare you to give it a try!

Sugar Free Avocado Chocolate Pudding

Prep Time: 5 min
Keywords: blender dessert gluten-free paleo soy-free sugar-free
Ingredients (3-4 servings)
  • 2 medium ripe (not brown) avocados
  • 3 medium bananas
  • 6 tbsp cocoa powder
  • 1 tsp liquid stevia (add to taste)
  • 1/4 cup almond milk (or milk of choice)
Instructions
Peel and slice avocados and bananas.
Place all ingredients into a food processor or blender.
Pulse until smooth.
Consume straight from said device or chill and then serve. :)

Friday Favorites - Half Birthdays, Healthy Fast Food, New Recipes, Fun Workouts, & Lunch Dates

Happy Happy Friday!

It's been a busy but great week over here at the George house full of lots of baby giggles, new recipes, and great workouts! This weeks Friday Favorites touches on some of my favorite moments from the week. Linking up with Heather, Katie, and Clare for all things fabulous and Friday related!

Housewife Glamour

#1 Annabelle Turns 6 Months Old Today! 

I can't believe this tiny human has only been in my life for half a year! I seriously can't imagine it without her and it just keeps getting better every single day. I'll have a full 6 month recap up next week once we take her official 6 month pictures (those are super important you know). However, I have to say the funniest thing she is doing lately is her excited face.Lately, whenever she gets really excited she opens her mouth extremely wide like she is trying to eat you. There isn't much that makes her more excited than her jumper so jumper + crazy face = tons of hilarious pictures! Happy Half Birthday Baby Girl!!!




#2 Healthy Fast Food

On Tuesdays and Thursdays, I eat breakfast at the studio between my 7 AM and 9 AM classes, so I have to bring something with me. Lately, I have been loving mason jar chia pudding. I simply mix 1 cup of almond milk with 3 tbsp chia seeds, 1 tbsp flax seeds, 1 packet of stevia, and a dash of cinnamon. Just throw all of the ingredients in the jar and shake it up. Voila! Breakfast to go!


#3 Tasty New Eats

I've been trying to mix things up in the kitchen this week and had some definite success. My top picks for this week include sweet potato and turkey sausage scramble, Easy Peasy Paleo Meatballs, and avocado tuna salad. I also tried Cashew Cookie Larabars for the first time, and it is definitely one of my new favorite flavors.


#4 Mixing Up My Workouts

I told you guys on Wednesday, that I often get stuck in the rut of always doing 12 reps for every exercise. I'm not sure why 12 seems to be the magic number, but it is. This week, I blew measly old 12 out of the water and did 50 reps of each exercise! It definitely mixed things up and made my body work for it! #5 Lunch Dates With Aunt Emily

On Thursday, we got to have lunch with Aunt Emily, and all three of us had a blast. Annabelle just got to the point where she can sit in a high chair and she loves being able to sit and look around at everything (and try to chew on the table). It makes going to lunch with her so much fun because she can actually interact with us the whole time now! She had such a good time she was worn out by the end!






And that about wraps up our week! Another great one in the books. I can't believe this little booger is 6 month old today!
