Getting Crafty and Zucchini Hummus

Howdy Friends,

Happy Monday! How was your weekend? Ours was really laid back. This was the first weekend in literally a month that we have not had a home football game. Although I love football, it can really eat up your weekend.

On Friday night, we tried out a new pizza place that has gluten free crust. It was delicious! Saturday morning started out with a killer workout! QiFORZe and Piloxing classes back to back left me dripping in sweat and starving! I ran home in time to make kickoff for the Texas A&M football game. E and I spent the entire afternoon watching football and making curtains for our living room. Our ceilings are super tall (which I love), so we could not find curtains to fit. That's how I ended up trying my hand at making homemade curtains. Did I mention we have 4 windows that need curtains. Yep, that is 8 curtain panels made by yours truly. I'll post pictures when I finally get them all done. I've got 6 finished so far!

As many of you may know, I am obsessed with Pinterest. I have hundreds of pins under DIY; however, I am not the craftiest person. So when one of my creations turned out beautifully, I was beyond excited. I had been searching Pinterest for a fall wreath for a couple of weeks and found this one that I really liked.

I wanted to do a fall wreath and use FSU colors so it would match our flag that we have outside of our house. Plus FSU colors go well with Aggie colors so it all works out perfectly! Here is how it turned out!



I was pretty pumped about the results! After I found all of the supplies I needed, it wasn't too hard to make! All I had to do was paint the wreath and letter in the colors of my choice. I attached the letter to the wreath using hot glue and twine, and then hot glued on the flowers. Voila! It took a little while to paint because I had to let one side dry before I could do the other side, but other than that, it was pretty easy! :) Now, we are ready for fall.

Sunday was spent grocery shopping, working on the blog (do you like the new header?), and prepping food for the week. One of my new favorite things to pack in my lunch is homemade zucchini hummus. I like to load up my veggies with hummus which can pile on the calories pretty quickly. By adding zucchini to your hummus recipe you bulk up the volume without adding more calories. Here's what you need.



The recipe is super easy and makes a ton. I ate it every day last week and still have some left in the fridge! :) Check out that dip! That is a lot of hummus on a little carrot. Just the way I like it!

Zucchini Hummus

Prep Time: 5
Cook Time: 5
Keywords: raw snack side gluten-free chickpeas

Ingredients (A Lot!)
  • 1 large zucchini
  • 1 can rinsed and drained chickpeas
  • 2 tbsp Tahini
  • 1 tbsp olive oil (I used lime infused olive oil)
  • juice of 1 lemon
  • 1/2 tsp cumin (more to taste)
  • 1 tsp minced garlic
  • dash of salt
Instructions
Dice zucchini so it fits easily in the food processor.
Place all ingredients in the food processor and pulse until smooth.
Have carrots ready so you can taste test. Add additional salt or cumin as necessary to fit your taste buds.

Howdy!

How are you today? What did Tuesday bring you? I started out my day with a killer boot camp class (my glutes are already sore) followed by a Piloxing class. In the afternoon, I went to talk to new employee orientation about health and wellness. I rounded out the day with a core class and some more work.

In honor of hump day, I want to share with you a few things I am loving lately!

Aren't they too cute? I want one so bad. I could build them a pool in my backyard right?

Another thing I am loving these days is this delicious Cinnamon Apple Detox Drink. You simply slice up a Fuji apple and throw it in a pitcher with a stick of cinnamon. It helps curb my sweet tooth, tastes great, helps me consume more water throughout the day, and the cinnamon can help balance your blood sugar.

Lastly, I love love love at home weekend workouts, and this one is a real gem! No equipment necessary, but totally but kicking and sweat inducing = my favorite kind of workout!

Oh How Pinteresting Fitness Style

Happy Wednesday!

How are you today? It has been a doozy. I started out with a Tabata class at 6am, followed by a trip to the bank to take care of stuff to fix our hail damaged roof. Next up was a Pilates client, and a Piloxing class at noon. A green smoothie fueled me at lunch for my 4:15pm Barre Class. A trip to Whole Foods and a little bit of kitchen craziness later, dinner was served and E was home! It was quick, crazy, and sweaty, but good! :)

Easter Weekend!

Howdy!

I hope you all had a wonderful weekend celebrating Easter, Passover, or just enjoying the nice weather!

When I got home from work on Friday, I had a package from Amazing Grass sitting on my front porch!



I have heard so many great things about this company, and I wanted to try a little bit of everything. Luckily for me, they have amazing sample packs that you can purchase to see what flavors/products you like before you buy the big tubs. I purchased an Amazing Meal Sample Combo, a Wheat Grass and Green Superfoods Sample Pack, and one other sample pack that had a few other superfood flavors. Amazing Grass products are all natural and literally bursting with nutrition. I couldn't wait to try one out, so I whipped up a smoothie for my afternoon snack on Friday and tried the Amazing Meal original flavor packet.



I used spinach, strawberries, 1/2 a banana, ice, and almond milk, plus the amazing meal packet. This was one super powered smoothie. Check out these facts on the Amazing Meal packet.


Since the original flavor actually didn't have much flavor, and I added extra spinach, the smoothie was a little green tasting (i.e. it wasn't as sweet as normal), but I still really enjoyed it. I can't wait to try the other flavors!! My smoothie fueled me for a little Easter shopping. I spent the rest of the afternoon putting together E's Easter basket. He's going to be on a sugar high for a month!


That evening, E and I got to go the the Maverick's basketball game with some people from my office. Even though the Mavs lost, it was a great game!!



We had a blast! Saturday morning was full of Easter goodies. I made E's favorite funfetti cookies, Easter themed Rice Krispie treats with white chocolate and M&M's, and cookie dough cheesecake.



E said they were both delicious, but he LOVED the cookie dough cheesecake. I found the recipe on this blog via Pinterest.

We felt very blessed to share such a wonderful Easter weekend with our family and friends. I hope you all have a wonderful Monday!

Happy Happy Friday!

Woohooo it's Friday! The weekend is here and it's time to party!


This is Champ's party face!! Ok, so really it's his sleepy face, but isn't he cute? He passed out on the rug about 5 minutes after I took this picture. :) Poor sleepy baby.
I want to share a little Friday inspiration with you friends. I came across this picture on Pinterest a few days ago and it really hit home. Even though things might not always be perfect, you can always smile with the knowledge that every breathe is another chance to start anew. :)



This is definitely going to be pinned to the front of my planner for whenever I need to let go of the negative and start anew. Choose to be that today! :)

What are you up to this weekend? I will be attending another Pilates certification. After this weekend, I will be halfway to becoming a fully certified Balanced Body Pilates trainer. Whoop! This weekend is all about the reformer.

The reformer is one of my favorite pieces of Pilates equipment, so I am very excited for this weekend. We start the workshop tomorrow at 5pm and go 5-9pm on Friday, 12:00pm-8:30pm on Saturday and 9:00am-4:00pm on Sunday. I have a feeling I am going to be pretty pooped and sore come Sunday!

As I write this post, I am sipping on one of my new favorite beverages - cold brew green tea with lemon. I love green tea, but sometimes it is too strong when I brew it in hot water. Lately, I have enjoyed simply dropping a tea bag into my water and letting it diffuse slowly. I keep the same tea bag in for a couple of refills and enjoy the refreshing flavor it gives my water.




A refreshing drink full of antioxidants.......what more could you ask for?

What Pinterest has taught me about healthy eating!

Hello Everyone,

How are you today? Thank you all so much for your well wishes! I'm sad to report that my toe is still pretty large and purple, but I think it's doing a little better than yesterday. You never realize how important your toes are, or how many nerve ending are in your toes until you injure one. I feel like I am going to be very overprotective of my little piggies from now on!

I know many of you love Pinterest as much as I do, but I am still always amazed at what fun health and fitness related pictures, tips, and recipes I find on there all the time. I thought I would share a few of my favorite health and nutrition tips that I've learned from Pinterest lately!

Did you know that about raspberries? I totally bought raspberries at the store two weeks in a row after reading this!

I love swapping Greek yogurt for less desireable alternatives, so this chart is super helpful!

Peanut butter cupcakes? Yes, please! Why didn't I think of combining cool whip and peanut butter? Now we all know!! :)

Cucumber + Lemon + Ginger + Mint = a delicious sassy beverage with no artificial sweeteners, and almost zero calories. This is so refreshing and easy to make. I usually make a big pitcher and leave it in the fridge!

Did you know some foods helped out their friends so much? You learn something new every day, and when I'm on Pinterest, I feel like I learn something new every 10 minutes!

Although I love Pinterest, I have to be careful not to get sucked in, or 3 hours will fly by and I won't know what happened. :) Anyone else have this problem?

Happy Monday Everyone!!

I hope you all had a wonderful weekend. I apologize again for my absence. I will finally finish grad school in December, so I am in my final push to the finish line. I really can't believe that I will be done with school FOREVER in about a month! I can't wait! This weekend we had a banquet for Eric's flag football team (yes, they are that intense), my wonderful friend Katie's wedding in Houston, and a flag football tournament. I also got to see my best friend since second grade Kelley! Kelley lives in Houston now so I don't get to see her as much as I used to, so it was so nice to have some time to catch up! :) Even though it was busy busy, it was a fantastic weekend!

So I have a new love in my life and its name is Pinterest! Are you in love with him too?  I seriously could waste hours (which I should be using to write my thesis) just browsing and finding motivational quotes like these...
