Veggie and Brown Rice Fiesta Bake!

Hello There!!
How was your Monday? Mine was pretty fantastic. I met with a great friend about some exciting changes for the blog, taught an awesome Booty Barre class, trained some Pilates clients, and then wrapped up the day with a heart pumping zumba class. It was sweaty, productive and fabulous! Just how I like it.
After a busy day, I was hungry hungry hungry. I saw this recipe on Pinterest for a cheesy Mexican bake, but wanted to healthify it a bit! You can do amazing things with corn, beans, brown rice, and salsa!






I can't believe a recipe this simple was so delicious!! This will definitely have a permanent spot in our regular dinner rotation.
Veggies and Brown Rice Fiesta Bake

Ingredients (6 servings)
  • 1 can black beans rinsed and drained
  • 1 can yellow corn rinsed and drained
  • 4 cups cooked brown rice
  • 1/2 cup salsa of choice
  • 1/4 cup green jalapeno salsa (or add 1/4 cup more of your salsa of choice)
  • 1/4 cup cheddar cheese + more for sprinckling
Extras:
  • Lettuce
  • Avocado for topping
Instructions
Preheat oven to 350 degrees.
Cook rice according to package directions.
Mix corn, black beans, rice, cheese, and salsa together.
Pour in 9X9 casserole dish and cover with foil.
Bake for 20 minutes.
Uncover and sprinkle with a thin layer of cheddar cheese.
Cook for 5 minutes more or until cheese is melted.

After dinner, I had give into my sweet toothe with my new favorite healthy treat! Allow me to introduce you to Enjoy Life Crunchy Sugar Crisps! They are all natural, diary, nut, and gluten free.
