Is that puppy not the cutest thing you have ever seen? I want a miniature bulldog so bad!! Eric is always the reasonable one out of the two of us, and he says we are not home enough for a puppy. Which is true, but they're so darn cute!!
Something about Friday's just puts me in the mood to bake, and for the last three weeks bread has been my baked good of choice. Today, I decided to make whole wheat blueberry oat bread and whole wheat Craisin oat bread. Since I could not decide which one to make, I simply made the dough, split it in half, and then added the fruit.
Ingredients:
2 cups whole wheat flour
2 tsp. baking powder
1 tsp. cinnamon
1/4 cup Splenda Sugar Blend
1 tbsp. Brown Sugar Blend
1 tsp. salt
1/2 cup quick cook oats
1 egg
3 egg whites
1 1/4 cup Almond milk (or the milk of your choice)
1 tsp. vanilla extract
1/2 cup blueberries
3 Tbsp. Craisins
Directions:
- Preheat oven to 350 degrees.
- Mix all of the dry ingredients together. (flour, baking powder, cinnamon, splenda, brown sugar, and salt)
- Stir in wet ingredients. (eggs, almond milk, and vanilla)
- Split the dough into two bowls.
- In one bowl, fold in 1/2 cup blueberries.
- In the second bowl, stir in 3 tbsp. Craisins.
- Pour into 4 small bread pans or 2 large bread pans.
- Bake for 30 minutes, or until the top looks firm.
