Good morning!

I started my morning with an absolutely amazing four mile run. I went to bed last night excited to wake up and go on my run. The weather is still ridiculously beautiful here in the Dallas. I have always loved running, but when it's this beautiful outside it's almost addicting. I just want to be outside all day everyday!

When I got home, I made myself a bowl of power oatmeal and settled in to watch the news. I started to work on this post when the story about the Chilean miners came on. They just rescued the 14th miner. In case you are not familiar with the story, 33 Chilean miners have been trapped in a mine for 69 days. What an amazing story of perseverance and faith! Please keep these miners and their families in your thought and prayers throughout the day as they continue the rescue efforts.

We all have our favorite products, or foods that we purchase every time we go to the grocery store. Here are my top 5 favorite finds!


Almond Breeze is a delicious milk substitute. I picked up a carton the other day when it was on sale at Kroger, and was pleasantly surprised. It is light and slightly sweet with only 40 calories and 3.5g of fat. Almond milk is also and excellent source of calcium, vitamins D, E & A.



I am trying to break my coffee addiction for the umpteenth time. My current plan is to not keep any coffee in the house, so when I really want some (like yesterday), I have to go out and get it. I am trying to switch over to green tea instead. I love Lipton Green Tea with Lemon Ginseng, it has a slight citrus flavor which I really like. One cup contains 120mg of protective antioxidants, with only 30mg of caffeine compared to 100mg in a cup of coffee.


I am currently obsessed with Kashi TLC Pumpkin Pecan Fruit and Grain Bars. They taste like Fall! These little bars contain only 120 calories, 3g fat, 4g of fiber, 4g of protein, and no high fructose corn syrup. Those are pretty had stats to beat!


I've talked about my quest to eat more meatless meals in previous posts and these little veggie burgers have become a staple in my freezer. I love to put them on sandwich thins with a little avocado and spinach for a yummy burger alternative, or chopped up in a tortilla with salsa for a taco style dinner. They are very versatile and super easy to make. Each burger has 120 calories, 4g fat, 13g carbs, 4g fiber, and 11g of protein. If you've never tried MorningStar's Spicy Black Bean Burgers, I would definitely suggest picking some up!


Last but not least, is my beloved almond butter. This stuff is absolutely life chaning. Almond butter contains about the same amount of calories and fat as peanut butter, however it has 2 additional grams of fiber and is an excellent source of vitamin A. It is a little sweeter than peanut butter and goes with everything from Greek yogurt, and oatmeal to toast and muffins. This is a must buy!

  1. Those all look like great choices! Maybe you explained it before, but why the almond milk instead of regular? It's weird when big events are going on, because they kind of connect us. Last night when I was at the Rec I watched the first Chilean miner get pulled out live while I was doing my 6 miler. It's so strange to think that as I type this there is still one man trapped down there waiting for his turn to get out.

  2. My "always" products are jarlsberg cheese, organic milk (it lasts FOREVER), and hummus. I realize hummus is trendy, but I get it because it's wonderful with cucumbers (as an alternative to ranch dressing), it's great with baked pita chips, and many other options.

    I need to try almond butter and almond milk!

  3. I go with almond milk or soy milk over cows milk for two reasons:
    1) I like the taste better
    2) Cow's milk stresses the body because it contains substances such as the protein casein, that are difficult for many people to digest. You are also taking in any toxins or chemicals the cow consumed before it produced the milk.

    The story of the trapped miners was so awe inspiring. Now that we are learning even more about what they went through I can't believe they survived for 69 days. Talk about courage!

    Virginia: I absolutely love hummus. I eat it practically every day!!!
