I think I married T-Rex!

Happy Hump Day Everyone,

I apologize for my absence yesterday. I think I might have been on my death bed. OK, that is a slight exaggeration, but I was definitely more than "a little under the weather." I'm not sure if it's allergies, a sinus infection, or the flu trying to sneak up on me, but I am fighting back with avengence. Thanks to lots of Excedrin, Nyquill, and Tylenol Cold the past 12 hours have been much better than the previous 48!

Back on track. If you are wondering why I titled this post, "I think I married T-Rex," it is not because Eric is mean, grouchy (although he can be if it's before 8am), scaly, or a fan of Jurassic Park. He is a T-Rex for the simple fact that if he had it his way, he would eat nothing but meat at all times. I will admit, he loves to have potatoes with his meat and the occassional chocolate chip cookie is a must, but mainly he just loves meat. According to Eric, a meal isn't a meal without a very large portion of meat, and I just cannot convince him otherwise. Let me give you an example: when we go to Texas Roadhouse (a very delicious steak joint in Texas), he will order a 16oz (no that's not a typo) steak with mashed potatoes and a side salad (thank goodness something is green). That is an entire pound of meat!!!


The reason I bring this up is because due to our very crazy schedules lately, Eric and I have been eating all meals, minus the weekends, on our own. I often have class or work until 9pm, so most of my dinners come out of my lunch box. Although this is very sad (I always pictured us eating every meal together once we got married), it has opened my eyes and stomach to some new meatless meals. Without even realizing it, I have become a week day vegetarian. Now don't get me wrong, I still enjoy the occasional grilled chicken breast and I couldn't live without sushi. However, I used to think being a vegetarian would be so hard and you would constantly be hungry or feel fatigued. This is simply not the case. I can go 4-5 days in a row without having a single bite of meat, and I honestly don't even notice. My hope is that one day, I can convince Eric that 2/3's of his plate does not have to be devoted to meat just to feel full. It is possible to feel full with a good mixture of vegetables, whole grains and legumes.

Please don't get me wrong, I am not going to become a vegetarian (my dad and Eric would probably kill me), but I do think it's interesting that it happened without me even thinking about it. I am writing this post to: 1) to see if this has ever happened to anyone else, and 2) to encourage you (and maybe Eric) to be open to trying more meatless meals. Since I started thinking past the usual turkey sandwich or grilled chicken breast, I have discovered some amazing and delicious vegetables, beans, and vegetarian recipes! Food for thought:
Have you even gone a couple of days in a row without eating any meat and not even realized it?

  1. maybe you should be a vegetarian with benefits, like me :) You eat mostly vegetarian...minus a few bites of steak and fish!

  3. My boyfriend is a vegetarian and he cooks most of our meals together, so I don't each much meat these days. I have some frozen shrimp that I saute to mix with pasta, and cans of tuna at work and that's really it unless we eat out. It certainly is cheaper, but I love chicken and fish, so I miss it all the time. Also, I donate plasma and I have to watch my protein levels a little closer than most folks.

  4. I definitely know what you mean by going days at a time without missing meat. I used to be like that and in the end I went vegetarian as it works well for me.   5. I think fish and shripm will be the hardest things for me to give up! I wish my husband was as open as your boyfriend to trying more meatless meals, but I'm definitely not going to come between a man and his meat. Plus I know going meatless isn't for everyone.
