Happy Hump Day Friends! Can you believe it is already Wednesday? Let's start with my favorite fitness motivation find of the week.

If you couldn't tell my Monday's Post (Pumpkin Spice Crepes), and Tuesday's post (Pumpkin Protein Bites) I'm loving me some pumpkin right now. Yesterday's breakfast featured my favorite orange friend as well. A little high fiber, vitamin A packed, fall inspired goodness to start the day right! :)



Sticking with my one meal = 5 lunches theme that I love so much (remember the Cinnamon Apple Frittata?), I made a new quinoa creation for lunch this week. Fiesta Lime Quinoa Salad to be exact. Check out all of those filling veggies and beans!




Fiesta Lime Quinoa Salad

Cook Time: 10

Ingredients (6 servings)
  • 1 cup dry quinoa
  • 1 cup corn
  • 1 cup chickpeas
  • 1 can black beans
  • 3 tbsp Olive Oil
  • Juice from 1 large lime
  • ½ cup chopped red onion
  • 2 tsp garlic
  • Salt & pepper to taste
Instructions
Cook quinoa according to package directions and set aside to cool.
Chop red onion into small pieces.
Mix corn, black beans, red onion, and chickpeas together in a large bowl.
Add in the quinoa, olive oil, lime juice, garlic, salt, and pepper.
Mix well and enjoy!

This recipe is super easy to throw together, stores beautifully, and is perfect hot or cold. The best part is, it gets better after sitting in its own juices overnight! MMMMMMM!
