Breakfast To Go Two Ways

Hello There!!

How is your week treating you so far? Hopefully, fabulously. E and I are busy busy getting ready for the big move. Often times, when we are busy we feel like we don't have time to eat healthy, but that is simply not true. With a little bit of pre-planning you can have healthy and quick meals on hand when you need them! I've got two great grab and go breakfast recipes to share with you today. One for when you are craving something sweet for breakfast, and one for when you are in need of something savory!

First up, something savory for those mornings you need an extra punch of protein to get you going! Egg muffins inspired by the lovely Shana over at ColorBlind.

Veggie Egg Muffins

Prep Time: 5 minutes
Cook Time: 20 minutes

Ingredients (12 muffins)
  • 8 whole eggs
  • 4 egg whites
  • 2 cups spinach
  • 1 cup mushrooms
  • Pico de gallo to taste
  • 2 tbsp water
Instructions
Preheat oven to 350 degrees.
Grease muffin tin.
Place equal amounts of mushroom and spinach in each tin.
Drop a dollop of pico de gallo in each spot. I like a lot so I did about a teaspoon in each one.
Mix eggs, egg whites, and water in a large bowl.
Pour over veggie mixture.
Bake for 20-30 minutes or until tops are firm.

Next, on deck is a recipe for when your sweet tooth is in full gear as soon as the alarm goes off! Chewy banana oatmeal cookies with no added sugar, oil, or butter. These puppies are De-lish-us! I have to hide them from myself so I don't eat the whole batch in one sitting.

Chewy Oatmeal Breakfast Cookies

Prep Time: 5 minutes
Cook Time: 15 minutes

Ingredients (24 cookies)
  • 3 mashed bananas
  • 1 cup apple sauce
  • 2 1/4 cup oats
  • 1/2 cup Almond milk
  • 1/4 tsp stevia
  • 1/2 cup golden raisins
  • 1 tsp cinnamon
  • 1/4 cup dark chocolate chips (optional)
Instructions
Preheat oven to 350 degrees and grease a large cookie sheet.
Mash up bananas in a large mixing bowl.
Add all of the other ingredients to the banana mixture and mix well.
Use a tablespoon to drop dough onto cookie sheet.
Bake for 15 minutes or until firm.
