Weekend Fun & Cinco De Mayo Veggie Dip

Howdy!
How was your weekend? Did you have fun celebrating Cinco De Mayo? Our weekend was fairly low key but very fun. We went to dinner on Friday night and then wondered around at Dick's Sporting Goods (both of our favorite store) for awhile!


Then it was home to spend some quality time with the pup! He likes to pretend he's a lap dog. :)


Saturday was full of yard work. We planted some new flowers (pink of course) in front of our house, and mulched some of the other flower beds.


Saturday night we went over to our friends Kelli and John's house for a little Cinco De May Celebration. I made Becky's Famous Mexican Dip. It's the perfect Cinco De Mayo side dish!

Becky's Mexian Salad Dip

Ingredients (A huge Bowl)
  • 1 can of corn
  • 1 can of black beans (I rinsed mine to get rid of all that hidden sodium)
  • 1 green bell pepper, finely chopped
  • 3 Roma tomatoes, diced
  • 1/2 a white onion, finely chopped
  • Finely chopped cilantro (This is really all about personal preference. I used about 4-5 little stems full.)
  • Lime Juice to taste (I started with 3 tbsp. full and added as needed)
Instructions
Dump the corn and black beans into a bowl.
Chop up all of the other ingredients and toss in the bowl.
Pour in lime juice.
Stir until well mixed.

The best thing about this dip is that the leftovers are so versatile. It made an appearance in my morning omelet, my dinner side salad, and I'm planning on packing it for lunch tomorrow as well! What more could you ask for from leftovers?



Sunday was full of the usual grocery shopping, laundry, flag football, and more cuddle time with Champ!


Overall, it was a pretty fantastic weekend! :)
