Hello There!

How are you this chilly Thursday? A cold front came in last night and brrrrr it's cold in here there must be some toros in the atmosphere. Oh crap, did I just quote Bring It On. Yep! The inner cheerleader in me is always bursting to get out. I just can't help it! I've had complete strangers come up to me after class and ask me if I was a cheerleader back in the day. Hahaha. I used to not know how I felt about that, but then I just decided to embrace it. I used to cheer on the Tigers, and now I serve as everyone in my classes personal cheerleader to fitness! :) I'll take it.

Speaking of being a cheerleader, sometimes we all need to be our own cheerleader. I came across this a while back on Pinterest, and I think it's a wonderful reminder to be positive each and every day even on the long tough days.



Today, tomorrow and always I will try to do these things with a full heart! Will you?

Ok, I'll stop channeling my inner motivational speaker/cheerleader. Aren't they the same sometimes? On to the recipe of the day. I have been looking for a gluten free hummus for a while (more on why gluten free in a later post), but haven't had any luck so I decided to create my own. I've come across quite a few hummus recipes in the blog world, but for some reason I have always been a little intimidated by the idea. This weekend I gave myself a little pep talk and dove in. I must admit it was a success, and now I have enough hummus on hand to feed an army, or at least top all of my salads for twp weeks! :)

Zesty Gluten Free Hummus

Ingredients (2 cups)
  • 2 heaping cups chickpeas, drained and rinsed
  • 3 tablespoons tahini
  • 1/4 cup fresh lemon juice
  • 1 1/2 tabelspoons olive oil (I used lime flavored olive oil)
  • 1/2 teaspoon cumin
  • 1 clove of garlic, plus garlic powder to taste
  • 1 teaspoon salt
  • 3 tablespoons plain yogurt
  • 2 teaspoons parsley
  • 1 teaspoon peprika
Instructions
Place chickpeas in food processor or blender and pulse until smoothe.
Add tahini, lemon juice, garlic, and salt. Pulse until well mixed.
Finally, add the remaining ingredients blending until well mixed.
Add more garlic and/or parley to taste (I'm a big garlic fan)!
