Wooohooo It's Friday!!
How are you today? It's Friday, so hopefully you're fabulous! Someone thinks he's a model. Look at that pouty face! Hahaha :)
How did you get your sweat on yesterday?? I taught a Hip Hop class and did an awesome sprint workout on the treadmill.
Power Half Hour Sprints:
1/2 mile warm up at a comfortable jog
6X400 at my 5k pace with a 1.5 minute recovery jog in between
1/2 mile cool down at a comfortable job
If you don't have access to a track and/or don't want to do this workout on the treadmill, you can alternate between 2 minute pickups and 1.5 minute recovery jogs. I ended up covering about 3.5 miles in a little less than minutes. This workout is perfect if you want to work hard but don't have much time.
Last night's dinner featured another Clean Eating Special. This one was so easy but tasted absolutely amazing. Both Eric and I thought it was a winner! Now that's saying something.
Sage Pork Tenderloin and New Potatoes:
- 4 new potatoes, scrubbed and cut into 1/2-inch cubes
- 1 tbsp olive oil
- 1 tsp sage
- 1/4 tsp garlic powder
- pork tenderloin (I can't give an amount since Eric eats for three people, but probably around 12-16oz for two people)
1) Bring a large pot of water to a boil. Reduce to a simmer, add potatoes and cook for 8 minutes or until potatoes have reached desired tenderness. Drain and place in a large bowl.
2) Cut tenderloin into 1/2-inch cubes. In a large nonstick skillet, heat 1 tsp oil on medium for 1 minute. Add pork, sage and garlic. Cook for 5-8 minutes or until cooked through, flipping throughout.
3) Pour potatoes into the pan with the pork and stir until both are coated with seasoning.
See, I told you it was super easy! I served it with a side of corn and of course a salad. It took me less than 30 minutes to prepare, didn't require any crazy ingredients, was healthy, and E even liked it. What more can a busy, health concious wife ask for?
What are you up to this weekend? I am going to tackle some cleaning tomorrow (puppies sure do make a mess), work on some choreography for classes, meet up with a friend for a run, and hang out with my wonderful husband. I'm pretty excited!
